A relatively modern specialty from Puglia, Burrata was invented in Andria at the beginning of the 20^th century. Burrata was made in order to rescue the little scraps of buffalo mozzarella that were leftover in the cheesemaking, sure they never imagined the delicious result of this!

The name burrata means “buttered” in Italian, so you can imagine the ultra-soft and creamy flavour it has! This unique cheese has a thin spun casing and a soft buttery center, which is made from fresh cream and unspun mozzarella curds. It is often wrapped in “asfodelo” which is an herb-like plant similar to leeks to ensure an incurably creamy consistence and unique flavour.

The flavour and different textures of the inside and outside make it go well with salads, prosciutto, crusty bread, fresh tomatoes with olive oil, and also with pasta.

Giorgio Locatelli and his wife Plaxy have worked in partnership with the owners of Tenimenti Montoni Estate in western Sicily to create Locadeli Olive Oil.

Unlike other olive oils, Locadeli is unfiltered. The olives are hand-picked, washed and then milled within hours; so ensuring the fruit is of the highest quality possible. The impurities are then left to fall to the bottom where they are removed from the process. The result is a green-gold coloured oil with a pure taste and velvety smooth texture.

Simply mix crushed garlic, lemon zest, parsley and the oil and rub generously over the meat before cooking.

Prosciutto di San Daniele or San Daniele Ham is a unique ham with wonderful flavour and texture. It is made with pork and sea salt coming exclusively from pigs bred in ten regions of Northern Central Italy Italy (Friuli, Venezia Giulia, Veneto, Lombary, Piedmont, Emilia Romagna, amongst others).

Tonight Italian kids are expecting a magical visit from La Befana!

La Befana is one of Italy’s oldest and most celebrated legends. The name Befana derivates from the Greek word “Epifania” which means manifestation or appearing and it commemorates the visit of the Three Wise Men to baby Jesus.

Each year on January 6^th the children in Italy awaken in hopes that La Befana has made a visit to their house.

Legend has it that in the 12^th night of Christmas, the Three Wise Men were travelling to Bethlehem to pay homage to the new born baby Jesus. In their search they decided to stop and ask for indications of which direction to take; they knocked on a door and an old lady came to open it, they asked if she knew the road which led to Bethlehem but the woman did not know where the place was, the Three Wise Men asked to join them, but she refused because she had a lot of housework to do. She later changed her mind and went looking for the Three Wise Men and the baby Jesus, but was unable to find them, and so she stopped every child to give him a present in the hope that this might be the Baby Jesus.

Therefore, every year on the night of January 5^th the day of the Epiphany, “La Befana” will travel in her magic broom to every house in in search of the baby Jesus bringing gifts. Climbing down the chimneys, she fills the children’s socks with candy and presents if they were good and black coal or dark candy if they were bad.

Many families leave her a small glass of wine and a small plate of goodies.
